I’m always amazed with how wonderful the macerating process works on fruit. Sugar alone would coax out their natural juices but spiking them with Grand Marnier? Genius! Having worked the restaurant industry for 20 plus years, I can tell you this simple and elegant dessert appears often and in many different forms. My take on its many variations relates to the KISS method. “Keep It Simple Stupid” Drunken Peach Melba is so simple and straight forward. With its minimal ingredients and preparation that produce such a big bang on the dessert table why would anyone want to mess with that formula? I guess perhaps it speaks to creativity or like those trick quiz questions – it just seems too easy. Who knows?
