Grilled Shrimp with Mango Avocado Salsa. Refreshing, light, and easy to prepare. Enjoy the tropics at your table tonight.
The avocado mango salsa with its perfect balance of sweet and tang provides a perfect base for unadorned grilled shrimp to sit atop.
Shrimp preparation doesn’t come much easier than this. A light brushing of olive oil and dusting of salt and pepper to taste and your done. Grilled or griddled in under 5 minutes produces shrimp that are plump and juicy and snap when bitten into. Mmmm!
The red onion in this salsa adds a wonderful crunch factor and flavor note. However, for this salsa I prefer to downplay the pungent kick red onion is often famous for. Not that the pungent kick is a bad thing especially when served with something as fatty as liverwurst. Toning down the onions pungency is very easily done by placing the sliced onion in ice water for about 5 minutes. Drain well and pat dry. This method works well in many salsa’s and chutney’s that include fruit as well as accommodating those guests that are onion averse.
Grilled Shrimp with Mango Avocado Salsa is a very healthy, light – and best of all, delicious recipe to insert into your repertoire. Impress your guests with your cooking prowess.
