These muffins bake up in about 30 minutes. For those of you wishing to impress overnight guests most of the 40 minute prep can be accomplished the night before. Peel and dice peaches, cover and refrigerate. Mix your dry ingredients together, cover and set aside. Make the streusel, cover and set that aside as well. When you rise in the morning take out the butter and eggs for the muffins and set on the counter to come to room temperature. If you are in a hurry you can always soften the butter slightly in the microwave if you own one.
